For almost a century, the Fischer & Wieser Farmstead has been an integral part of Fredericksburg’s rich history and community, evolving into one of Texas’s most sought-after travel destinations. As we celebrate our 55th anniversary, we reflect on our journey from a humble peach orchard to a thriving epicurean and destination experience.

The Beginning: A Passion for Peaches

The story of Fischer & Wieser began in 1928 when German immigrant J.B. Wieser (pictured below) planted a small orchard of peach trees. This modest beginning laid the groundwork for a family tradition of dedication and love for the land. J.B.’s son, Mark Wieser, continued tending the orchard during his summer breaks from college, nurturing not only the trees but also a deep-seated passion for farming.

In 1969, Mark founded Fischer & Wieser’s Das Peach Haus—the region’s first permanent roadside fruit stand. Crafted from the sturdy logs of an 1870s German log cabin, Das Peach Haus quickly became a beloved destination for peach lovers from near and far. Nestled amid the rolling hills of Fredericksburg, Texas, it offered the juiciest, most succulent locally harvested peaches and handcrafted preserves, drawing visitors eager to taste the flavors of the pristine Texas Hill Country.

Evolution and Expansion: The Birth of Fischer & Wieser Specialty Foods

As Das Peach Haus thrived, Mark Wieser’s dedicated worker, Case Fischer, found himself increasingly passionate about the process of farming and preserving. The joy of seeing customers relish the jams and jellies made right there on the farm inspired Case to dream bigger. He approached Mark with an idea: “I think we can do something truly spectacular with these jams and jellies!”

This pivotal moment marked the birth of Fischer & Wieser Specialty Foods. From that point forward, Fischer & Wieser dedicated itself to producing over 150 exquisite, handcrafted specialty products, beloved by customers around the globe. Despite achieving fame in the specialty food industry, we have never lost sight of our roots. To this day, we take immense pride in cultivating some of the most succulent peaches you’ll ever taste.

The Farmstead Today: A Culinary and Entertainment Destination

Today, the Fischer & Wieser Farmstead has grown far beyond its origins as a roadside fruit stand. It offers an abundance of epicurean delights and destination experiences that make it a must-visit for food enthusiasts and travelers alike.

At the heart of our offerings are our locally made specialty foods. From award-winning preserves to savory sauces, each product reflects our commitment to excellence and the unique tastes of the Texas Hill Country. Visitors can taste and purchase these delicacies, ensuring they take a piece of our tradition home with them.

Fischer & Wieser also offers cooking classes through our Culinary Adventure Cooking School offering a multitude of cuisines and options to choose from. Whether you’re looking to enhance your cooking skills in a private setting with friends or join a public class to meet fellow food enthusiasts, our cooking classes cater to all levels of expertise. Participants leave with new culinary techniques, recipes, and a deeper appreciation for the rich flavors of the Texas Hill Country and beyond.

Looking to wine taste in Fredericksburg? Our Farmstead is a haven for wine lovers. Guests can enjoy tastings of our locally crafted Texas wines, each bottle telling a story of the land and the meticulous care that goes into every grape. 

We regularly host live music events, where the sounds of talented local musicians add to the vibrant atmosphere of the farmstead. These events celebrate community and culture, bringing people together through the universal language of music. Check our calendar to see our current lineup. 

For those who wish to immerse themselves fully in the Farmstead experience, we offer on-site accommodations. Staying with us allows guests to wake up to the serene beauty of the Texas Hill Country, with the Farmstead’s offerings just steps away. 

A newer addition to our array of experiences is Dietz Distillery. Here, visitors can tour the facilities and sip on expertly crafted spirits, shop our small batch liquors and cocktail mixes, adding another layer to our rich tapestry of flavors. 

No visit to Fischer & Wieser would be complete without experiencing our peach harvest. During peach season, guests can pick up some of the best-tasting peaches in the Texas Hill Country. Additionally, we’ve added more seasonal chef culinary cooking class series to our annual calendar.  Our Culinary Adventure Cooking School received the USA Top Ten Best Award in recognition of offering a unique hands-on experience in the beautiful Texas Hill Country.
