For almost a century, the Fischer & Wieser Farmstead has played a significant part in Fredericksburg’s rich history and community, making it one of the most sought-after Texas travel destinations. How did the F&W Farmstead and Das Peach Haus Start?

The Fischer & Wieser Farmstead began with the planting of a small orchard of peach trees in 1928 by German immigrant J.B. Wieser. His son Mark continued to tend to the peach orchard during his summer breaks from college as it was a true labor of love.

In 1969, Mark founded Fischer & Wieser’s Das Peach Haus– the region’s first permanent roadside fruit stand crafted from the sturdy logs of an 1870’s German log cabin. The humble abode, perched amid the rolling hills of Fredericksburg, Texas, swiftly became a mecca for peach lovers far and wide, eager to savor the juiciest, most succulent locally harvested peaches and handcrafted preserves from the pristine Texas Hill Country.

Fast-forward a decade, as Das Peach Haus continued to flourish, one of Mark Wieser’s dedicated workers, Case Fischer, was tirelessly harvesting summer peaches and growing ever more passionate about the process of farming and preserving. As customers streamed into the store to sample the mouthwatering jams and jellies made right there on the farm, Case couldn’t help but feel a deep sense of satisfaction knowing that he had a hand in bringing joy and happiness to their lives. It was then that he approached Mark with an idea that would change everything: “I think we can do something truly spectacular with these jams and jellies!”

With that, Fischer & Wieser Specialty Foods was born – a labor of love, dedicated to producing over 150 of the most exquisite, handcrafted specialty products imaginable, beloved by customers around the globe. Despite our rise to fame in the specialty food industry, the team at Fischer & Wieser has never lost sight of our roots. Today, we still take pride in cultivating some of the most succulent peaches you’ll ever taste.

Dietz Fischer opened the doors in November 2021 and is focused passionately on preserving old-world distilling techniques. The handcrafted selection of spirits currently includes Five Judges Gin, Himbeere Vodka, Peach Eau de Vie, and the delightful Pear Eau de Vie.
