New York Strip with The Original Roasted Raspberry Chipotle Sauce®

Just when you thought New York Strip couldn't get any better!
Ingredients
1-5 pound New York Strip Roast
1 ½ tablespoon sea salt
2 bulbs fresh garlic cloves, peeled
¼ cup four-color pepper blend, ground
2 tablespoons olive oil
1 sprig of fresh rosemary
Directions
Let roast stand at room temperature one hour before cooking. Preheat oven to 350º. At each string on top and bottom of roast, cut a ½ inch slit halfway through roast and place a garlic clove into each slit. Place roast in large pan. Coat roast with oil and sprinkle generously with salt and pepper. Reserve oil, salt and pepper left in pan.
In a large skillet, over medium heat, sear roast ends, top and bottom over medium heat 30 seconds per side. Roll roast in reserved oil mixture. Place in roasting pan. Cook, uncovered, until color becomes dark brown, approximately 15 minutes per pound--1 hr. 15 min. – then cover with foil until internal temperature has reached 130º.
Let roast stand 15 minutes before carving. Cut strings and serve roast with room-temperature Fischer & Wieser The Original Roasted Raspberry Chipotle Sauce®. Garnish with a sprig of rosemary.
