Stuffed French Toast

2 Tbsp. Cognac or other brandy
8 oz. Cream cheese (softened to room temperature)
2 eggs
1/2 cup milk
1/2 Tsp. granulated sugar
12 slices thick-cut white bread
Butter for cooking
Confectioners' sugar
Fresh fruit
Directions
Heat the Raspberry Chipotle Sauce and the cognac in a saucepan and, in a bowl, combine about 2 tablespoons of this mixture with the cream cheese. In a small bowl, whisk together the eggs, milk, and sugar. Spread the cream cheese mixture on half of the bread slices. Top with the remaining bread slices and press around the edges to seal. Melt butter on a griddle over medium-low heat. Dip the sandwiches in the egg mixture for a few seconds on each side. Cook the sandwiches until golden brown, 2 to 3 minutes per side. Serve with a dusting of confectioners' sugar and fresh fruit. Spoon the remaining warm sauce over the top.
