Miss Jane’s Smokey Mesquite Mustard Pork Tenderloin

Ingredients
4-6 pound pork tenderloin (1)
- 1/4 cup
olive oil
- 1/2 teaspoon
coarse salt
- 1/4 teaspoon
black pepper, freshly ground
Directions
Coat pork tenderloin with olive oil.
Mix Mesquite Horseradish Mustard with coarse salt and freshly ground pepper to taste.
Coat the tenderloin with the mustard mixture.
Roast in 375º oven for approximately 30-40 minutes or until internal temperature reaches 155-160ºF.
Remove from oven, cover loosely with foil and let sit for 10 minutes.
Slice horizontally, serve.
