BBQ Smoked Chicken Sandwich

    Ingredients

    Directions

    • Preheat the smoker to 275 degrees F. Load the smoker with apple wood chips or wood chips of your choice.

    • Spatchcock the chicken by removing the backbone and lay flat on a stainless steel cooling rack.

    • Coat the chicken with Fischer & Wieser Bacon Chipotle BBQ sauce.

    • Place the chicken in the smoker. Smoke for 2-3 hours or until a thermometer inserted into the thickest part of the thigh reads 165 degrees F.

    • Remove the chicken from the smoker and let it rest for 20-30 minutes.

    • Shred the chicken, place in a bowl, and mix ½ cup of the Bacon Chipotle Sauce.  Place the shredded chicken on an aluminum tray and add one slice of cheese on top of each sandwich portion. Return to the smoker and close the lid for 3-5 minutes or until cheese has melted.

    • Place each chicken portion on a bun and garnish with arugula and top with Bacon Chipotle sauce. 

    • Bring it to the next level by spreading Fischer & Wieser Bacon & Apple Jam on the Brioche buns.
