History of Fischer & Wieser
Our Founder's Story
Introduction
The Fischer & Wieser Farmstead originated in 1928 when German immigrant J.B. Wieser planted a small peach orchard. His son Mark continued caring for the orchard during college breaks.
In 1969, Mark founded Fischer & Wieser’s Das Peach Haus – the region’s first permanent roadside fruit stand, crafted from an 1870’s German log cabin. Located in Fredericksburg, Texas, it became a popular spot for peach enthusiasts seeking locally harvested peaches and handcrafted preserves from the Texas Hill Country.
A decade later, Case Fischer, a dedicated worker, joined the team and developed a deep passion for farming and preserving. Inspired by the joy their products brought to customers, Case proposed a transformative idea to Mark – to expand their jams and jellies offerings – and Fischer & Wieser Specialty Foods was born.
Today the company produces over 150 handcrafted specialty products across a family of brands that are available throughout the country and internationally.
1969
The Beginning
Mark Wieser opens his first retail location, Das Peach Haus, in a restored 1870 log cabin.
1979
Case Fischer Starts Harvesting Peaches
A 15-year-old Case Fischer goes to work for Mark Wieser harvesting summer peaches and begins thinking about his future in the industry.
1986
The Birth of Fischer & Wieser Specialty Foods
Case Fischer officially teams up with Mark Wieser, and the company becomes Fischer & Wieser Specialty Foods.
1997
Awarded Outstanding New Bestseller
Fischer & Wieser wins the Outstanding New Bestseller from the Specialty Food Association for the Original Roasted Raspberry Chipotle Sauce.
2001
Acquired Mom’s brand
Fischer & Wieser purchases the beloved Austin brand Mom’s Pasta Sauce from family friend Patrick Timpone to ensure the preservation of the sauce’s cherished original recipe.
2016
Started The Culinary Adventure Cooking School
With the goal of inspiring customers culinary adventure, cooking classes and events were launched within the historic Das Peach Haus.
2019
Created Four Star Provisions
In partnership with H-E-B, a new Fischer & Wieser line was created to bring a wide variety of worldly flavor profiles that were adventurous yet relatable for consumers.
2020
Created Stick + Tine
Based on the instant success of the H-E-B Four Star Provisions partnership, the Stick + Tine product line was co-created and inspired by authentic Asian condiments served at local restaurants.
2023
Acquired Fredericksburg Fudge
Fischer & Wieser purchased Fredericksburg Fudge from long-time family friends that were planning to retire and saw the opportunity to continue offering their beloved scratch-made premium confections.
