How Mark Wieser Built Fischer & Wieser from a Family Orchard Fruit Stand

In 1969, Mark Wieser embarked on a journey that began with a simple question to his mother: “Can you make the jams and jellies I grew up with?” This question was an afterthought when Mark opened Das Peach Haus, a modest fruit stand nestled in the heart of the family orchard in Fredericksburg, Texas. What started as a way to share the flavors of his childhood with the community evolved into a business that would later become Fischer & Wieser Specialty Foods, known today for its premium, handcrafted products. 

Mark’s story is one of passion, creativity, and deep family roots. As he set up the fruit stand, he realized that offering more than just fresh produce could make his venture unique. He began recreating the jams and jellies he loved as a child, and those original recipes became the foundation for what is now the Fischer & Wieser Heritage line

Mark had brought back a German juicer from a trip in 1964. This innovative tool made it easier to extract juice from any fruit by simply using steam, allowing him to experiment with new flavors and products.  

The first products to grace the shelves of Das Peach Haus included classic preserves and jellies made from plums, Mustang and Concord grapes, and of course Fredericksburg peaches. He also offered Peach Honey made from an original 1850’s recipe from Mark Wieser’s Aunt “Nutzie.”

By the summer of 1970, Mark’s product line was growing and included his personal favorite, Green Grape Preserves. This unique preserve was made from early spring grapes and became a sought-after addition to the lineup. Other local flavors included pear, dewberry, and strawberry preserves. Another popular flavor from the original preserves was Wild Plum Jam-made from the wild Mexican plums that grew along the fence lines of the family orchard. A friend of Mark’s mother suggested adding Agarita jelly that was new to him but grew to love the taste.

The small batch preserves and jellies quickly gained a following. Locals and visitors alike appreciated the dedication to quality and the authentic taste of Texas Hill Country. Over time, the product line continued to grow, with new creations like Winter Melon preserves, peach and apple butter.

Mark’s sister-in-law, Jean Wieser, created wildflower jellies as tribute to our Texas Wildflowers with the flavors she imagined they would have.  Texas Buttercup delivers a butterscotch, orange flavor. Texas Yellow Rose delivers a coconut, orange flavor. Indian Paintbrush delivers a peppermint, orange flavor. Our State Flower, Texas Bluebonnet, delivers an almond, apple flavor. 

These unique flavors were standouts- and by the 1990’s, the business expanded into other products, including the now-famous Original Roasted Raspberry Chipotle Sauce, which launched Fischer & Wieser into national recognition.

Mark Wieser’s journey from a small fruit stand to a beloved Texas specialty food brand is a testament to his entrepreneurial spirit and his love for local, handcrafted foods. For decades, the Fischer & Wieser Heritage line of products has only been available in the company’s retail stores, allowing visitors to experience the rich flavors of the Hill Country.
