Peach Raspberry Parfait

    • Start by crushing the Raspberry Shortbread Cookies by placing them in a zip-top bag and rolling over them with a rolling pin or drinking glass.

    • Next, make the whipped cream topping. In a large bowl, use an electric mixer with the whisk attachment to whisk heavy cream, 2 tablespoons sugar, and vanilla at high speed until soft peaks form.

    • Cut peaches into thin slices, then begin building your parfaits. Alternate layers of whipped cream, peach preserves, crushed cookies and fresh fruit. End with a layer of whipped cream, and add a peach slice and raspberry on top. Makes about 4 parfaits. Enjoy!
