Peach Raspberry Parfait
Ingredients
1 box Salem Baking Raspberry Shortbread Cookies
1 cup cold heavy whipping cream
2 tbsp sugar
1/2 teaspoon vanilla
Fresh peaches
Fresh raspberries
Directions
Start by crushing the Raspberry Shortbread Cookies by placing them in a zip-top bag and rolling over them with a rolling pin or drinking glass.
Next, make the whipped cream topping. In a large bowl, use an electric mixer with the whisk attachment to whisk heavy cream, 2 tablespoons sugar, and vanilla at high speed until soft peaks form.
Cut peaches into thin slices, then begin building your parfaits. Alternate layers of whipped cream, peach preserves, crushed cookies and fresh fruit. End with a layer of whipped cream, and add a peach slice and raspberry on top. Makes about 4 parfaits. Enjoy!
